When Shadowalker and Knight fire razor disks and bows keeping out of their range, they can destroy them because turrets range is shorter. So why are turrets there? Also, sometimes turrets appear in enclosed spaces or alongside other enemies, where you can't easily just attack them from outside their range. Finally, some turrets regenerate health fast enough that picking them off from range may not be viable. The first encounters with turrets are really just a tutorial: they get harder later on.
