Understated Ur-Drakon Earth
My opinion is that some enemies have too high (absurd) resistances (on normal, on torment I don't even want to think) like Deathcurse, bit over 100 points fire damage taken and it resists ~600 points fire damage, lightning spray does bit lower damage and also is less resisted, immunity is ok although Eyebeasts immunity to lightning spray is weird. Hatchling Cockatrice Randomizer
Monsters have different immunities and some are very high to prevent you from killing them quickly. Difficulty level doesn't change resistance, but they have more health so those resistances mean longer fights. You have to figure out what damage type works best against each monster. For instance Adze Haakai takes less than 5% from physical weapons so magic is the way to go. Some are completely immune to a damage type. Rotghroth Rhapsody The Reverend
I may be mis-remembering, but I thought eyebeasts and gazers have traditionally been resistant to energy damage in Jeff's games, so seeing it here is normal. Yup, gazers have been immune to magic ever since the Exile series.
Understated Ur-Drakon Earth
against DCH there is no good way to deal damage, lightning does 50-60, fireblast and divine fire do ~100 damage but are very mana consuming to use, priest's energy attack deals most damage but its very consuming and caster needs to be quite close to intended target (have tried it ~4 steps away from DCH and its constructs and no effect), smite does around same as ls but casters need to kill bw construct so ls and fb and df are mostly used. Articulate Vlish Kestral
Escalation of resistances and armor ratings as level increases is just another part of progression. It means that fights get longer at higher levels, since both HP and armor/resist are increasing on the defensive side, but damage increase is roughly linear (unless you get lots of +% damage effects along with your increasing number of base damage dice...those effects seemed pretty rare though).
