They add 10% to resistances and a bit more in armor, and I believe they add 20% to accuracy/damage (like a blessing buff, but stacking with blessing buffs) in a weapon. —Alorael, who has found them quite useful. So if you have a 50% resistance to start with, a Golden Crystal will bring it to 55%. It's also possible that it was actually changed for the Windows version, though; I think that Golden Crystals in G5 only give you 5% to resistances.
