You can't actually run a business out of them or anything, they're pretty much just for roleplaying purposes (although the first one you can buy has a mini-boss fight in it that rewards you with some treasure). As far as storage goes, you can drop items anywhere you like in the entire game and they'll still be there when you come back, as long as you remember where they are.
