Can you change outdoor wall sheets?

You can change from surface to cave, but other than that, no, not by normal means.

 

You could conceivably try to create custom terrains that work the same way as walls, but it would be an incredible pain. You could also use the LP approach to changing character graphics (use a custom graphic with the same number as the graphic you're trying to replace), but that only worked on Macs.

what do you mean exactly with terrain types? Like replace the wall sheet somehow or do you mean something else?

Put the official outdoor wall types in a safe place, You can create a special folder in your BoA directory. I think the graphics are types 614 and 616.
All terrain graphics should be found in the folder: Blades of Avernum\Data\Terrain Graphics
Make your own two new wall types, name them G614.bmp and G616.bmp and put them in the Data folder. This change will affect all outdoor sections in your scenario, whether you want that or not.

Replacing base data files would only be required on Windows for the record, since with the cmg file the game automatically loads sheets from there in preference to the main resources.

 

The reason that doesn't work on Windows is because it's not an intentional feature - it's just the way the Macintosh Resource Manager works.

I don't think it would be a bad idea if it worked on both platforms, though I'd say there's no point unless it's a graphic that's not otherwise customizable. Custom missiles or explosions could be done this way, though. That said, not working on Windows is a pretty big barrier.
