IIRC, while the type of monster does affect the amount of exp you get (Dragons would give you more than a Goblin, etc), level still does matter. If you're level ten, Slimes, for example, will stop giving you exp. The idea is by that time, you would have moved on to a different part of the game, which has higher level monsters, and thus, where you will get your exp from. Same goes for quests.
